Abstract:

PURPOSE: To efficiently deactivate sporulating bacteria attached to food materials, etc., without the need for heating, leading to good hygienicity and long-term storage stability, by adding a lily extract to an object to be sterilized followed by application of ultra-high pressure of a specified level or higher.

CONSTITUTION: A lily extract obtained from e.g. garlic, scallion, onion or Welsh onion is added to an object to be sterilized and the object is held at 0-60°C to deactivate the spores of sporulating bacteria attached to the object which is also subjected to ultra-high pressure of ≥100MPa, thus accomplishing the objective sterilization.
