Abstract:
To provide reduced-, low-, and/or non-caloric sweeteners comprising sweet steviol glycosides that have taste profiles with reduced or no bitterness or undesirable flavors, or sweetness profiles more like natural caloric sweeteners, or combinations of such properties.SOLUTION: A Stevia extract comprises rebaudioside B at a concentration that is in the range from 10 wt.% to about 90 wt.% of the Stevia extract. A sweetening composition comprises sweet steviol glycoside compounds, where the sweet steviol glycoside compounds comprise rebaudioside B at a concentration that is in the range from 10 wt.% to about 90 wt.% of the total amount of sweet steviol glycoside compounds in the sweetening composition.SELECTED DRAWING: Figure 3
