Abstract:

PURPOSE: To storage a fish for celebrating thing, etc., capable of making fillets of favorite size and shape in each family and keeping the original figure of the fish body, by dressing the fish body, coating MISO (paste made of fermented soy bean, used for the prepn. of soup) layers on the back spine part and the surface of the fish body with layers of MISO and subjecting the fillets to vacuum packing.

CONSTITUTION: A fish body is filleted into three pieces while keeping the figure, the inner bones are pulled out, MISO layers in desired thickness are put on the empty space after removal of the bones and on the surface of the fish body so as to keep an almost similar figure to the original, the coated fillets are packed under vacuum and the packed fillets are packed into an expanded polystyrene foam having a dent into which the packed fillets can be stored, wherein the dent has a shape approximately similar to that of the fillets and the fish is stored.
