PURPOSE: A sweet potato mix composition capable of preparing easily sweet potato having improved taste and flavor, by using gelatinized sweet potato flour having specific particle diameters as a raw material.

CONSTITUTION: 100pts.wt. sweet potato flour having ≥70% gelatinized degree, comprising ≥80% powder having 50W500μ particle diameters is blended with 30W100pts.wt. sweetener such as sugar, glucose, powder of thick malt syrup etc., and optionally powder of bean jam, fats and oils, powder of the yolk, dairy product, etc.
