Abstract:
To provide a swollen food composition containing beans, which is improved in airy texture, hard to stick to teeth, and improved in freedom of moldability.SOLUTION: This swollen food composition containing beans and/or grains satisfies all the followings 1)-6). 1) Dietary fibers are contained by 3 mass% or more in dry mass conversion, 2) starch is contained by 5 mass% or more in dry mass conversion, 3) protein is contained by 4 mass% or more in dry mass conversion, 4) a soluble carbohydrate contained in one or more edible plants selected from beans, miscellaneous grains, potatoes, nuts, vegetables, and fruits is contained by 2 mass% or more in dry mass conversion, 5) edible parts of beans and/or grains and a dietary fiber local part of the edible plant are contained by 10 mass% or more in dry mass conversion relative to the total mass of the swollen food composition, and 6) an aqueous dispersion containing 2 mass% of the swollen food composition is subjected to an ultrasonic treatment, using a laser diffraction grain size distribution measurement device, so that the swollen food composition particles in the dispersion has a number reference average diameter of 30 μm or lower and the maximum particle diameter of 300 μm or higher.SELECTED DRAWING: None
