Abstract:

PURPOSE: To obtain a taste improver capable of softening saltiness by salt- accustoming effect and surely improving the taste of common salt-containing beverages and foods without impairing unnecessary sweetness and taste by jointly including a specific sweetener and sodium glutamate.
CONSTITUTION: This taste improver contains (A) preferably 100 pts.wt. acesulfame K [namely, 6-methyl-1,2,3-oxathizine-4(3H)-one-2,2-dioxide-potassium as a sweetening substance] and (B) preferably 1000-2000 pts.wt. sodium glutamate. For example, an organic acid, an amino acid, a sweetener, a sugar alcohol, a coloring agent, preservative, etc., can be mixed therein in a range not inhibiting taste-improving action of the components A and B. The components A and B are preferably added respectively in an amount of 0.001-0.1wt.% and 0.02-1wt.% based on a common salt-containing drink and food.
