Abstract:
To provide thermally inhibited waxy cassava starch and edible compositions made therefrom.SOLUTION: In one aspect, edible compositions have improved creaminess compared with conventional starch, independent of a starch usage level and viscosity provided by the starch. In one embodiment, an edible composition comprises 0.1 wt.% to 35.0 wt.% of thermally inhibited waxy cassava starch. In various embodiments, the thermally inhibited waxy cassava starch has peak viscosity of about 100-2000 Brabender units or 500-1500 Brabender units.SELECTED DRAWING: Figure 1
