Abstract:

PURPOSE: To provide a specific type of thermostatic-humidistatic chamber de signed to automatically control the fermentation of various kinds of bread dough.

CONSTITUTION: The objective thermostatic-humidistatic chamber where the respective processes of freezing, refrigeration, thawing, preheating and heating are stored with the respective temperatures, humidities and operational times corresponding to each bread dough at a frozen state, refrigerated state or normal temperatures are set and plural operations in the form of selective combinations of the above processes suitable for each bread dough are also stored. Codes are assigned to the above-mentioned respective operations and processes and made into a matrix; With the resulting system as index, requirements are read from the process conditions described above, and based on these requirements, the operations are controlled.
