Abstract:
PROBLEM TO BE SOLVED: To provide a method for efficiently producing many sheets of thin sliced processed meat as a product with reduced probability of occurrence of defectives in slicing a processed meat product to a very thin thickness.SOLUTION: A processed meat product such as loin ham is sliced in a frozen state into sliced hams 1 with a thickness of 0.3 to 1.5 mm. Many sheets of the sliced hams are stacked to make a laminate 1A formed of thin sliced processed meat products. Since the ham is thin sliced in a frozen state, a cutting blade operates in a stable conditions even for the partial difference in raw material texture, resulting in very few occurrence of cracks and bends in a produced thin sliced processed meat product.
