Abstract:
PURPOSE: To provide the subject oil and fat containing a specific amount of distearomonolinolein, etc., having excellent taste, flavor and stability, exhibiting low caloric effect owing to the formation of dischargeable decomposition products after digested in vivo and useful for food, etc.
CONSTITUTION: The objective oil and fat contains ≥30% distearomonolinolein and/or distearomono-α-linolenin. Foods such as potato chips can be prepared by using the oil and fat.
