Abstract:

PURPOSE: To enable to produce a protein gel product such as a food with a transglutaminase capable of being inexpensively and massively supplied.

CONSTITUTION: A protein-containing solution or slurry having a protein concentration of ≥1.0% is treated with the extract of true Myxomycetes or its fruit body having a transglutaminase activity to gelatinize the solution or slurry. The fungus belonging to the genus Physarum, Didymium or Stemonitis is used as the true Myxomycetes.
