Abstract:
PURPOSE:To increase the production volume of SAKE (Japanese rice wine) lees and reduce the cost of lees, by gelatinizing starch of white bran with an extruder, mixing the bran with block lees, aging and refining with enzyme existing in the block lees and converting the product to paste lees. CONSTITUTION:Starch of white bran is gelatinized with an extruder and the treated bran is mixed with block lees. After aging and refining the white bran with enzyme existing in the block lees, the lees is converted to paste lees to increase the volume of the lees. The lees is preferably used in combination with SHOCHU (low-class distilled spirits) and/or refined SAKE.
