Abstract:
PROBLEM TO BE SOLVED: To efficiently, obtain an alcoholic beverage high in productivity of glycerol and an ester such as isoamyl acetate, excellent in flavor and quality, by subjecting a raw material to alcoholic fermentation using Saccharomyces cerevisiae H6-7. SOLUTION: A raw material such as rice, barley, rye, buckwheat, millet and maize is subjected to alcoholic fermentation using Saccharomyces cerevisiae H6-7 (FERM P-15,349) to give an alcoholic beverage. The alcoholic beverage is preferably a brewed beverage or a distilled liquor.
