PURPOSE: To provide the novel enzyme having an optimal pH in an alkali region, extremely stable in a wide range of pH, high in the persistence of the activity at an optimal temperature, and useful as a component for cleanser compositions.
CONSTITUTION: An alkali isomerase. Action: the alkali isomerase hydrolyzes the α-1,6 glycoside bonds of glycogen and amylopectin, but does not hydrolyze the α-1,6-glycoside bonds of amylose and pullulan; action pH: 5-11; optimal pH: 9; pH stability: highly stable at a pH of 7-10, and keeps the activity of ≥50% in a pH range of 6-10.5 (treated at 40°C for 10min); action temperature: 40-60°C ; optimal action temperature: 55°C; temperature stability: extremely stable up to 50°C (treated in a glycine-salt-Na0H buffer solution having a pH of 9 for 30min); mol.wt.: 65000±1000 (by a sodium dodecyl sulfate electrophoresis method). The enzyme is produced with an microorganism [e.g. Bacillus SP. KSM-3309 (FERN 13005)] belonging to the genus Bacillus and having an ability to produce the enzyme.
