Abstract:

PURPOSE: The cross section area of the opening is adjusted, according to the temperatures at the inside and outside of the static fermentation tank and the acid formation rate, to control its natural aeration rate while vinegar fermentation is carried out, thus preventing undesirable fermentation caused by excessive or insufficient aeration.

CONSTITUTION: The cover 1 of the static fermentation tank 4 is provided with the air inlet opening 2 and the air outlet 3. During the vinegar fermentation, the air introduction rate into the tank is calculated from the difference between temperatures at the inside and outside of the cover and the optimum cross section area of air introduction is calculated from the above aeration rate and the theoretical aeration volume necessary for oxidizing alcohol into acetic acid. Either of the air inlet or the outlet is adjusted in the cross section area on the basis of the above calculation to effect vinegar fermentation as the natural aeration is being controlled.
