Abstract:
PURPOSE: To obtain a tasty flavor material consisting of methyl substd. furanthiol and its deriv. in a high yield by allowing a specified keto compd. to react with cysteine. CONSTITUTION: A blend of (2),(5)-(di)methyl-3(2H)-furanone or its precursor, e.g. diacetyl, pyruvaldehyde or pyruvic acid, cysteine and hydrogen sulfide in a molar ratio of 1:(7-9):(3-5) is charged into an autoclave and brought into reaction at pH 2-6 and 90-120 deg.C for 1-3 hr in a polar solvent contg. <=5 W/W% water under pressure in the presence of air to obtain the objective methyl substd. furanthiol and its deriv.
