Abstract:
PURPOSE:To provide a process for the preparation of barley gelatinized twice, effective for remarkably shortening the malt-preparation time compared with conventional process and enabling the preparation of high-quality malt. CONSTITUTION:This process for the preparation of processed barley suitable for malt-preparation comprises the gelatinization of raw barley with steam, the addition of 20-60wt.% in total (based on the raw barley) of immersion water and an aqueous solution of enzyme containing a prescribed amount of at least one kind of enzymatic agent selected from cellulase, protease and amylase-based enzymes and the secondary gelatinization of the gelatinized raw barley. The invention also relates to a process for the preparation of barley malt by culturing a seed malt inoculated to the processed barley.
