Abstract:
PURPOSE: To dynamicly filter milk without the deterioration of milk quality, the choking of a filter at an early stage and imperfect sterilization by separating milk into a fat fraction and a defatted milk fraction and homogenizing the defatted milk fraction so as to immediately pass through a microfilter. CONSTITUTION: Milk is separated into the fat fraction with about 10% minimum fat content and the defatted milk fraction. The defatted milk fraction is homogenized and made to pass through the microfilter with sufficient average perforation degree for reducing the bacteria content of milk flowing through it within 15 minutes. Thereby, a filtered liquid with a bacteria content smaller than an early defatted milk fraction and the concentrate with a bacteria content larger than the early defatted milk fraction are obtained. The bacteria content of the fat fraction is separately reduced and the defatted milk fraction after micro filtering and the fat fraction the bacteria content of which is reduced are put together. Thereby, sterilized milk which can be stored long is produced from the milk sterilized at a low temperature.
