Abstract:

PURPOSE: To decrease the shrinkage of steak or fried meat prepared from ground whale meat, to improve the shape-retainability of the meat, and to provide the meat with mild taste, by adding soybean protein to ground whale meat.

CONSTITUTION: Soybean protein, especially concentrated soybean protein washed with alcohol, is added to ground whale meat, and the mixture is frozen. The amount of the soybean protein is 10W60wt%, preferably 15W50wt% based on the solid component. The steak or fry prepared from the ground whale meat has mitigated shrinkage, improved shape-retainability, and mild taste. The ground whale meat can be prepared by grinding frozen red meat and tendon of the back part of e.g. a minke whale. The meat is added with soybean protein, water and if necessary edible oil or fat, mixed homogeneously with a silent cutter, etc., and frozen to obtain the objective ground and frozen whale meat containing soybean protein.
