Abstract:
PURPOSE: To prepare a high-quality CHIKUWA, preventing the damage of the CHIKUWA caused by the extraction of the core rod from CHIKUWA, by applying an oil to the lower end of the core rod.
CONSTITUTION: Ground fish meat is wrapped around the middle part of a core rod, formed by conventional method, and roasted; and the core rod is extracted to obtain a CHIKUWA. In the above process, an oil is applied to the lower end of the core rod preferably when the core rod is moderately heated.
