PURPOSE: To improve the protein recovery and emulsion stability, and to obtain a seed milk preservable for a long period, by pulverizing the seeds of sunflower in the presence of water, and heat-treating at a specific temperature under stirring.
CONSTITUTION: Sunflower seeds of a mixture of sunflower seeds and other oil seeds such as soybean, peanut, sesame, etc. is pulverized in the presence of water, and heat-treated at a temperature between 65°C and the boiling point under stirring. A seed milk having improved protein recovery and emulsion stability can be prepared. The protein recovery is lowered by the immersion treatment at higher temperature for longer time, however, in the heat-treatment process, the protein recovery after the removal of the insoluble solid component can be improved by carrying out the heat-treatment at higher temperature for a longer time. Preferably, the seed milk is pulverized again after the completion of heat-treatment.
