Abstract:

PURPOSE: To obtain the titled cake having a dried fruit in it recognizable clearly from the outside in good productivity securely, by attaching chocolate to the ridge part of folds of the dried fruit such as raisins, etc. having folds on the surface with a specific size.

CONSTITUTION: As the dried fruit 1 such as raisins, etc. having folds on the surface is stirred and made to flow in the rotary pot 3, tempered chocolate is sprinkled from the opening part 3 of the pot on the fruit 1, cold air at a temperature sufficiently lower than the melting temperature of chocolate is fed from the duct 5 to the chocolate fruit, it is cooled, these processes are repeated for plural times, so that the chocolate 2 is attached to only the ridge part of folds of the dried fruit 1, to give the desired cake.
