PURPOSE: To thaw a frozen food such as meat, fish meat, etc. uniformly without causing neither too much nor too less thawing, by controlling the surface temperature of the frozen food to be thawed and temperature in a storehouse in such a way that the surface temperature of the frozen food to be thawed during thawing is kept at a specific temperature.
CONSTITUTION: For example, the surface of a frozen food such as meat mass, etc. to be thawed is provided with a sensor, the food is controlled in such a way that the surface temperature is not raised ≥0°C for ≥5hr, and put in a container or a sheet made of a poor heat insulating material. After thawing of the food to be thawed is over, the surface temperature of the thawed food is kept at -1.0°C±1.0°C, temperature in a storehouse is kept to maintain ≥75% relative humidity and the food is preserved.
EFFECT: Surface drying, deformation, change in color, change in quality, and drip from meat mass will not take place, and thawing time can be extremely reduced.
