PURPOSE: A MISO, containing skinned soybeans, obtained by incorporating gelatinized skinned soybeans, a sweetening agent and if desired a seasoning, nuts, etc. in a MISO, and having good resistance to the tooth, improved appearance and a high nutritive value.

CONSTITUTION: A MISO, obtained by skinning soybeans, boilling or steaming the whole or halved soybeans, draining the soybeans, frying the drained soybeans in an edible oil to prepare gelatinized skinned soybeans, and incorporating and agitating the resultant gelatinized skinned soybeans with a sweetening agent and if desired a seasoning, nuts, etc. The resultant MISO has good resistance to the tooth due to the skinned raw material soybeans, and phenomena, e.g. dirty appearances blackened by the burned sugar in the soybeans, will not occur.
