Abstract:

PURPOSE: To prepare the titled cake having hard and tight texture and resistant to the teeth, by steaming grains such as rice, corn, etc. for a definite time, drying the doftened grains to a definite water-content, and popping and expanding the grains by an expansion machine.

CONSTITUTION: Grains 1 such as corn, rice, barley, etc. are mixed with water 3 in a container 2, and hydrated for a definite time. The hydrated grains 1 are steamed in a steamer 4a with 100°C steam for about 30min to expand the grain about twice the volume and to soften the texture to an extent to afford the crush with the teeth. The steamed grains 1 are dried in a hot air oven at 70°C for several hours to achieve a water-content of 15W3%. The dried grains are put into an expansion machine, and popped and expanded to obtain the objective snack cake.
