To raise the thawing and fermenting efficiency by reducing the offset of small-sized trays in the left and right directions and uniformly applying a thawing wind or a fermenting wind to a bread dough in a temperature and humidity regulating cabinet for baking designed to install each pair of left and right tray receiving crosspieces in the vertical direction in plural stages in the cabinet and place large and small trays for placing a bread dough therein on the left and right tray receiving crosspieces.

This tray receiving device is obtained by installing tray receiving crosspieces 15, formed into a cross-sectional shape of a structure of upper and lower two stages and provided with upper stage tray receiving batten plates 15a and lower stage tray receiving batten plates 15c integrally and connectedly installed through nearly vertical connecting plates under the inner ends of the upper tray receiving batten plates 15a. A large-sized tray 10 is placed on the left and right upper tray receiving batten plates 15a and a small-sized tray 11 is placed on the left and right lower stage tray receiving batten plates 15c. Since the left and right lateral parts of the tray 11 touch on the connecting plates, the movement thereof in the left and right directions can be regulated to reduce the offset of the tray 11.
