Abstract:

PURPOSE: To perform a collision jet cooling of a favorable heat conductivity by a method wherein a first temperature zone which introduces a food in a tunnel is set to be a non-freezing temperature zone of a specified temperature range, and after removing steam being vaporized in the non-freezing temperature zone as liquid drops, the food is made to enter a freezing temperature zone.
CONSTITUTION: A tunnel type refrigerator 31 in which a net conveyor 14 to transfer a food in the direction shown by arrow is provided is divided into 3 zones, and the first temperature zone 10 is set to be a non-freezing temperature zone of a temperature range of approx. 0-5°C. In the non-freezing temperature zone, vaporized steam is removed as liquid drops, and by the removal, an unnecessary steam of the food is removed at the non-freezing temperature zone. Then, in a zone 11 where a high speed cool gas is blown to the food, the food is rapidly frozen while preventing a dripping from generating, and in a zone 12 for cold-keeping, the food is stored under a frozen state. By this method, a collision jet type cooling of a favorable heat conductivity can be performed without relying upon a plate fin type heat-exchanger.
