Abstract:
PURPOSE: To produce a peptide-containing composition having low allergic action, containing decreased amount of bitter taste and odor component and useful for the preparation of modified milk for baby by decomposing casein with a protease in acidic state and treating the product under specific condition.
CONSTITUTION: This peptide-containing composition containing aromatic amino acids (tyrosine, phenylalanine and tryptophan) in an amount of 0.3-7.2wt.% in total amino acid composition and ≤35ppm of odorous component and having a lightness (L) of 80-95, a brownness (a) of -4.0 to +0.5 and an yellowness (b) of 13-16.3 is produced by decomposing casein with a protease in acidic state, treating with a peptidase in neutral state, subjecting the decomposition product to ultrafiltration membrane treatment to collect a permeate containing 20-50wt.% of peptide having maximum molecular weight of ≤3,000 and 50-80wt.% of amino acids, treating the permeate with an anion exchange resin to remove the bitter component, odorous component such as butyric acid and color component by adsorption to the resin.
