PURPOSE: To facilitate the vacuum cooking and long-term storage of vacuum cooking food by constituting an apparatus used for the process of a pre- processing and vacuum packaging of a food material having high possibility that bacterial are mixed therein, of a unit, and executing this process in a high clean space, at the time of executing vacuum cooking.

CONSTITUTION: The vacuum cooking exclusive kitchen unit is constituted so that a cooking work table 11, a vacuum packaging machine 12 and other vacuum cooking apparatus 10 are provided in a cooking chamber constituted of a panel stock, etc., and having a work opening 6 in the front, and by feeding out high clean air to the vacuum cooking apparatus 10 from a clean air supply device 20 provided additionally in the cooking chamber, at least a pre-processing work and the vacuum packaging work of a food material can be executed in a high clean space.
