PURPOSE: To prepare a vinegar having improved flavor and taste efficiently, by subjecting a raw material mash to vapor-liquid contact spinner culture by a closed type fermentation tank, and using an evolving exhaust gas in circulation while the gas being supplemented with oxygen.
CONSTITUTION: A raw material mash fed to the closed type fermentation tank 1 maintained at a given temperaure by the heat exchanger 2 is stirred by the rotary blade 3. While an evolving exhaust gas is circulated from the pipe 6 through the pump 7, the ventilation pipr 5, to the tank 1. In the circulation, the partial pressure of the circulating gas is detected by the detector 11 (the sign 14 is a detecting element), the valve 9 is regulated through the controller 12 for the partial pressure of oxygen so that oxygen gas in an amount which is consumed from the oxygen gas bomb 8 is supplemented, and the partial pressure of the circulating gas is always maintained at 10W40% (V/V).
