Abstract:

PURPOSE: To produce a wet and crude noodle free from swelling with time, rich in stiffness, glutinousness and elasticity, excellent in conveniency and capable of being readily loosened without using an additive or the quick freezing method and to provide its production method.
CONSTITUTION: Noodle lines are boiled and subsequently treated with an acid. Both the boiling treatment and the acid treatment may be carried out at the same time. At this stage, water and a required amount of the acid is absorbed so as to have 49 to 56wt.% water content and partial gelatinization is conducted. In the case the acid treatment is not carried out, the water content is controlled only by the boiling treatment. A steaming treatment us subsequently carried out by using steam of 100°C to 105°C so as to conduct the main gelatinization. The gelatinized material is packaged without a water washing treatment or a water cooling treatment and the water content of the completed product is controlled to 49 to 56wt.%. In addition, a wet and crude Chinese noodle excellent in conveniency and having 49 to 56wt.% water content and 3.0 to 9.0wt.% total content of generated soluble sugars is produced by this production method.
