Abstract:
To obtain a yeast for brewing a melt effervescent liquor excellent in flavor and taste by spreading a brewing yeast other than beer yeasts on a maltose agar medium added with hops and separating rapidly growing strains.
A yeast for brewing a malt effervescent liquor, having high maltose-fermenting function and resistance to hops is obtained by spreading a brewing yeast such as a refined Sake (Japanese rice wine) yeast, a bread yeast, a Shochu (a Japanese low-class distilled spirit) yeast, a wine yeast, a bread yeast, etc., except beer yeast on a maltose agar medium added with hops and separating rapidly growing strains on the medium. The malt effervescent liquor is preferably produced by using this yeast.
