Abstract:
To provide a nonconventional alcohol yeast-containing composition enabling a by-product discharged from an alcohol fermentation process to be effectively utilized, capable of strongly eliminating active oxygen and a free radical which are considered to be causes of various kinds of diseases, i.e. having high antioxidant activities, and containing rich amino acids in nutritional view points.
The alcohol yeast-containing composition having a high additional value and a processed product thereof can be provided by analyzing the yeast-containing composition by a prescribed analyzing method, and actually proving that the composition has high radical-eliminating activities, a high amino acid content and a large content of the yeast.
