Abstract:

To obtain yeast suitable to long-term storage and having the capability of its growth after storage and of its fermentation by enhancing its dryness tolerance.

In view of the idea that the elucidation of dryness tolerance mechanism, the resultant dryness-tolerant yeast and the theory of breeding the yeast will contribute to a useful technique hopeful of its application to other microorganisms, plants and animals in the future, yeast gene necessary for dryness tolerance is identified comprehensively, and based on the resultant information, the mechanism of dryness tolerance is found out, and the objective yeast with dryness tolerance can be bred by fragmenting vacuole.
