PURPOSE: To obtain a yeast strain capable of producing astaxanthin of red dyestuff in a high yield, by culturing a mutant of a yeast strain capable of producing astaxanthin in a specific state and selecting a strain capable of producing astaxanthin.
CONSTITUTION: A yeast strain capable of producing astaxanthin is subjected to mutagenesis through a mutagen and the mutant is cultured in the presence of at least an inhibitor for other cell products. Then, the inhibition degree of a coloring matter is measured, the product is subjected to mutagenesis, cultured in the presence of a fixed inhibitor concentration and a strain capable of producing astaxanthin is selected to give the objective yeast strain. According to the method for producing the yeast strain, (1) at least 3,000 μg, preferably 5,000-10,000 μg or further ≥15,000 μg based on 1g yeast of astaxanthin is accumulated; (2) astaxanthin is produced in high bixomass concentration, for example, ≥2 g/L or preferably ≥25 g/L; (3) a yeast strain capable of producing astaxanthin in a high coloring matter and a high biomass levels by fermentation for ≤150 hours, for example, ≤70 hours can be produced.
