Abstract:

PROBLEM TO BE SOLVED: To provide a water-containing chocolate which shows excellent dispersibility in cold water, carbonated water and the like, and especially to provide a chocolate beverage that has concentrated taste of chocolate, which is imparted by a raw chocolate material, and can be drunk even in a cold state.SOLUTION: The water-containing chocolate containing (A) a cacao solid content, (B) disaccharide and/or monosaccharide, and (C) two or more substances selected from dry whole milk, an emulsifier and liquid oil shows extremely excellent dispersibility when being mixed with cold water, carbonated water and the like, and can prepare a chocolate beverage having concentrated taste of chocolate.
