To provide a useful amino acid composition derived from fish and shellfish, especially from waste of the fish processing step, a food or food additive containing the composition and a method for producing the composition.
The useful amino acid composition 14 is produced by removing water and oil from fish and shellfish to obtain a solid material 2, adding an organic solvent to the solid material 2, separating the organic solvent extraction liquid to obtain a solid residue 4, hydrolyzing the residue 4 with an acid and extracting the composition. The useful amino acid composition 14 contains ≥20 wt.% amino acids consisting of aspartic acid and glutamic acid, ≥30 wt.% amino acids consisting of serine, glycine, threonine and alanine and ≥20 wt.% amino acids consisting of arginine and lysine.
