Provided is a food product production apparatus which has a simplified structure and overall is compact in comparison with a conventional food product production apparatus, and also provided is a food product production method which can improve efficiency. The food product production apparatus comprises: an extrusion apparatus which extrudes a food product material in the form of a plurality of bar-shaped food products; a cutting apparatus which includes shutters for cutting food products from the bar-shaped food products; a conveyance apparatus which has the food products mounted thereon and conveys the food products; and a control apparatus which controls drive for said apparatuses. The extrusion apparatus comprises a plurality of extrusion nozzles for extruding the bar-shaped food products and the extrusion nozzles are arranged in a staggered manner in the width direction of the conveyance apparatus, perpendicular to the conveyance direction of the conveyance apparatus. The shutters of the cutting apparatus are arranged under the extrusion nozzles in a staggered manner and correspond to the extrusion nozzles, respectively. The control apparatus can control the conveyance distance of the conveyance apparatus for each cutting action of the cutting apparatus.
