Abstract:
A binary compound starter, comprising a compound inoculant I and a compound inoculant II, and an application of the binary compound starter in the making of vinegar, wherein the compound inoculant I is added before acetic acid fermentation, and the compound inoculant II is added during the acetic acid fermentation stage. The binary compound starter can be used to make solid-state fermented vinegar and liquid-state fermented vinegar. The amount of the starter is small, fermentation efficiency is high, yield is high, and quality is stable. Moreover, the content of non-volatile acid, amino acid nitrogen, esters and other flavoring substances can be significantly increased, and the product has a rich flavor, a full and soft taste, and a prominent aroma.
