Abstract:
In a candy-coated food such as Daigaku-imo (fried and candy-coated sweet potato), the candy absorbs moisture in the food or air during storage after production and drips from the surface of the food, which sometimes damages the texture and appearance of the candy-coated food. The present invention addresses the problem of providing a candy for food coating capable of suppressing candy-dripping of a candy-coated food even under high humidity environment, a candy-coated food in which candy-dripping is suppressed, and a method for producing a candy-coated food in which candy-dripping is suppressed. A candy for food coating that contains a starch syrup, said starch syrup containing a linear reduced starch syrup, and satisfies the following (a) and/or (b). (a) The total content of disaccharide(s) and trisaccharide(s) relative to the total starch syrup is 25 wt% or more, and/or the total content of pentasaccharide(s) and higher relative to the total starch syrup is 70 wt% or less. (b) The hardness test force of the candy at 25°C is 90 N or more.
