Abstract:
Disclosed are: a cellobiose 2-epimerase having excellent heat resistance; a process for producing the cellobiose 2-epimerase; and a use application of the cellobiose 2-epimerase. Specifically disclosed are: a cellobiose 2-epimerase having excellent heat resistance; DNA encoding the enzyme; recombinant DNA and a transformant each of which carries the DNA; a process for producing the enzyme; and a process for producing an isomerized sugar using the enzyme.
