Abstract:
Provided are: a chitosan derivative which has an excellent emulsification ability and a high salt-forming rate, and from which it is possible to prepare an emulsification composition such as a highly stable milky lotion by finely dispersing various oils in water; and a method for producing the chitosan derivative. This chitosan derivative is obtained by introducing an amine-carboxylate group derived from a salt-forming agent and an acyl group derived from an acylation agent, into a chitosan having a degree of deacetylation of 70-100% and a weight average molecular weight of 120,000-3,000,000, such that the value of a ratio (A/S) of the introduction rate (A) of the acyl group with respect to the introduction rate (S) of the amine-carboxylate group becomes 9-70. The chitosan derivative is produced by reacting the acylation agent and the salt-forming agent with the chitosan in a state where the chitosan having a particle size that would pass through a 1 mm-opening mesh is dispersed in a reaction solvent containing an alcohol-based solvent.
