Abstract:
[Problem] To provide a citrus fruit composed of juice vesicles in which outer skin and inner skin are clearly peeled off by a method different from an inner skin peeling-off technique for citrus fruits which has been developed so far. [Solution] The present invention comprises: a pretreatment step for partly removing the outer skin of a citrus fruit and/or making a cut into the outer skin; an enzyme solution impregnation step for immersing, in a depressurized space, the pretreated citrus fruit in an enzyme solution that can decompose the outer skin and that is adjusted to room temperature or to a temperature of 10-40°C; an outer skin decomposition/removal step for decomposing and removing the outer skin from the citrus fruit that has been impregnated with the enzyme solution; a finishing process step for washing, with water, the citrus fruit, the outer skin of which has been decomposed and removed; and an inner skin decomposition/removal step for dividing, into juice vesicles having inner skin attached thereto, the spherical citrus fruit which has been washed with water and only the outer skin of which has been peeled off, and then immersing the juice vesicles in the enzyme solution to decompose and remove the inner skin.
