Abstract:
Provided are a compound enzyme and a method for preparing resistant dextrin by cooperating with synchronous extrusion. The method comprises: selecting the proportion of compound amylase according to different glycosidic bond action sites; performing high shear co-extrusion processing on a compound enzyme and starch; and by means of thermal-mechanical multi-physical-field coupling (µm-level non-directional shearing) and synergistic enzymolysis fixed-point depolymerization (nm-level specific shearing) in an extrusion cavity, finely adjusting and controlling the breaking order and degree of a linear chain and a branch chain of the starch so as to form differential chain length distributions. According to the method, a built-in dual-screw cavity is used as a reactor for efficient enzymolysis of the starch, and under the condition of increasing the axial diffusion rate, the residence time, and the action area of the reactor, the dosage of an enzyme liquid is reduced, thereby forming the high-crystallinity resistant dextrin (Mw: 0.5-8 kDa).
