Abstract:
Disclosed is a condensed milk-like whey composition obtained by adding auxiliary starting materials including sucrose to liquid whey, which has been preliminarily subjected to a high-temperature heat treatment, to give a liquid whey mixture and then heat-sterilizing and concentrating the liquid whey mixture. This condensed milk-like whey composition does not scorch during the production and has excellent properties and good taste.
