Abstract:
Provided are a cutting device and a cutting edge that, when cutting an elongated highly viscous substance, not only are capable of limiting bending of the highly viscous substance using a simple configuration but also limit breakage of the tool edge as much as possible. A pair of cutting edges (20) is provided so as to be capable of moving towards and away from each other, and the respective cutting edges (20) are disposed so that the thickness directions are oriented in the same direction while the respective tool edges (23) face each other. For each cutting edge (20): the thickness thereof becomes thicker from the tip (23a) of the tool edge to the blade root (21); each tool edge (23) is offset with respect to the partner tool edge (23), in the thickness direction of the cutting edges (20), in a range such that the tool edge faces a thickness direction side surface (35a, 35b) of the partner cutting edge (20); and at least the region of the thickness direction side surfaces (35a, 35b) of each cutting edge (20) that faces the partner tool edge (23) is formed of a substance of lower hardness than the partner tool edge (23).
