Abstract:
The present invention relates to a deep-frying production method for maintaining the original shape of shrimp, wherein the deep frying production method for maintaining the original shape of shrimp comprises: a first production step of making a plurality of slits in a the region of a the shrimp body close to the lower tail portion; a second production step of removing the shell on the back of the body; a third production step of primarily covering the head, the body, the plurality of legs, and the tail of the shrimp having its the shell removed from its the back, thereof with deep frying a first batter; a fourth production step of secondarily covering the shrimp primarily covered with the powderedfirst batter with a liquidsecond batter; and a fifth production step of first introducing the head at an acute angle into the oil (perilla oil) when putting the shrimp covered secondarily with the liquidsecond batter into a deep-frying vessel.
