Abstract:
The present invention provides for a defatted hazelnut milk beverage and it's preparing process. It is a hazelnut milk beverage that does not get easily oxidized to deteriorate and can be kept for a long period of time. Its raw materials include defatted hazelnut kernel material, seasoning and complex stabilizer. Its raw materials and their weight part proportion therefor are preferably defatted hazelnut kernel material 1-3 0, sugar 1-20, citric acid 0.01-0.1, sodium pyrophosphate 0.01-0.1, xanthan gum and locust bean gum or xanthan gum and guar bean gum 0.1-0.8, and water q.s. The defatted hazelnut kernel material is prefera+y prepared by the following method: immersing hazelnut kernel, removing inner husk, removing water on surface, stir-frying, grinding slurry, and hydrating and separating oils. The end-point of stir-frying is when the hazelnut kernel is yellowing a little and gives rise to evident aroma. Temperature of water added in the step of hydrating and separating oils is prefera+y 95 °C . The grinding step is suitably conducted before cooling hazelnut kernel. Thus, it has advantages of being not easily oxidized to deteriorate, being kept for a long period of time, good taste, rich and full nutrients, suitably using as children's food. The process of the present invention has advantages of high yields of defatted hazelnut milk beverage and byproduct hazelnut oil, good quality, and strong operability.
