Abstract:
The present invention provides a device for withering and fermentation of black tea, whereby withering, rolling and fermentation steps can be simultaneously performed to ensure efficient processing and automation and, at the same time, black tea having stable qualities can be obtained, and a method for withering and fermentation. This device 1 for withering and fermentation of black tea, which is for withering, rolling and fermenting tea leaves to be processed into black tea, comprises a housing part 2 housing tea leaves, a warm air supplying part 9 supplying warm air into the housing part 2, and a rolling hand 5 being rotatable within the housing part 2 and rolling the tea leaves housed in the housing part 2, wherein the rolling hand 5 rolls the tea leaves while supplying warm air from the warm air supplying part 9 until the moisture content of the tea leaves in the housing part 2 reaches a target level to thereby simultaneously wither, roll and ferment the tea leaves.
