Abstract:
[Problem] To provide a ketose 3-epimerase or a protein having the same activity in a mode in which an effect thereof can be maintained over a long period of time even under severe preservation conditions. [Solution] A dried body of an immobilized enzyme or of an immobilized protein having said enzymatic activity, the dried body being characterized in that the enzyme or protein having said enzymatic activity is a ketose 3-epimerase or a protein having the ketose 3-epimerase activity, and that the immobilized enzyme or immobilized protein having said enzymatic activity prior to drying is the immobilized enzyme or immobilized protein having said enzymatic activity, in which the temperature (optimal temperature) indicating the maximum activity has further improved than that prior to the immobilization, and the dried body being capable of enduring drying. A manufacturing method for immobilizing the enzyme or the protein, manufacturing the immobilized enzyme or immobilized protein having said enzymatic activity, in which the temperature (optimal temperature) indicating the maximum activity has further improved than that prior to the immobilization, and then drying the same. The enzyme or the protein are supported by an ion exchange resin, organic polymer carrier, and/or inorganic carrier and dried.
